Insanely Good Blueberry Muffins
I spent the late night last night (think 10:30pm) perusing the aisles of Winco with my lonely self (the babies were home with Jason fast asleep) and I was actually enjoying it. I hate the rushed, whirlwind grocery shopping trips where Koa is hungry for everything that has sugar in it in the store and Norah is tired and grumpy and I am dreading getting home unloading all the groceries by myself. Don't get me wrong, 9 times out of 10 that is what grocery shopping looks like for me, but the 1 out of 10 times I am able to go by myself is actually nice.
Before I left, I copied and pasted some recipes off of Skinnytaste.com and one of them happened to catch my eye: Insanely Good Blueberry Muffins was the title. So I gathered the ingredients in my cart and today Koa and his buddy were able to help me make them! I'll paste the recipe at the end of my blog if you want to try!
Insanely Good Blueberry Oatmeal Muffins

Ingredients:
- 1 1/2 cups Quaker quick oatmeal
- 1 cup unsweetened almond milk (or skim milk)
- 1/2 cup brown sugar, packed
- 2 tbsp agave (or sugar, honey)
- 1/2 cup unsweetened applesauce
- 2 egg whites
- 1 tbsp oil
- 1 tsp vanilla extract
- 1/2 cup white whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup fresh blueberries
- baking spray
Directions:Preheat oven to 400°. Line a muffin tin with liners and lightly spray with oil.
Place oats in a food processor or chopper and pulse a few times. Soak oats in milk for about 30 minutes.
In a medium bowl combine brown sugar, agave, apple sauce, vanilla, egg whites, oil and mix well.In a third bowl combine whole wheat flour, salt, baking powder, baking soda and whisk to combine.
Combine oats and milk with sugar, applesauce mixture and mix well. Slowly add in the dry ingredients and mix until just incorporated. Fold in blueberries.
